Ingredients

Scale
  • 1 lb catfish nuggets (fresh or thawed)
  • 1/2 cup cornmeal or panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 1 egg
  • 1 tbsp milk or water
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Cooking spray (olive or avocado oil)

Instructions

  1. Preheat air fryer to 400°F (200°C) for 3–5 minutes.
  2. In a bowl, beat the egg with milk or water to make an egg wash.
  3. In a separate bowl, combine cornmeal, flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
  4. Pat catfish nuggets very dry with paper towels.
  5. Dip each nugget in egg wash, then coat thoroughly in the breading mixture.
  6. Lightly spray or brush the breaded nuggets with oil.
  7. Place nuggets in a single layer in the air fryer basket without overcrowding.
  8. Air fry for 8–10 minutes, flipping halfway through, until golden brown and cooked through (145°F / 63°C internal temp).
  9. Transfer to a wire rack and let rest 1–2 minutes before serving.

Notes

Avoid overcrowding the basket for maximum crispiness. A wire rack keeps the nuggets crisp while resting.
