  • 1.5 to 3 pounds chuck roast (boneless)
  • 1 to 2 tablespoons olive oil or avocado oil
  • ½ to 1 tablespoon Worcestershire sauce (optional)
  • 1 to teaspoons kosher salt
  • 1 to teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon black pepper
  • 1 teaspoon paprika or other favorite seasonings (optional)

Instructions

  1. Preheat air fryer to 390°F (200°C). Line basket with foil if desired.
  2. Pat chuck roast dry with paper towels. Rub all over with olive oil and Worcestershire sauce (if using).
  3. Mix salt, pepper, garlic powder, onion powder, thyme, rosemary, and paprika. Rub seasoning mix evenly onto roast.
  4. Place roast in air fryer basket and cook for 15 minutes at 390°F to sear.
  5. Flip roast carefully. Reduce temperature to 320°F (160°C) and cook for 45 to 60 minutes based on size and doneness preference.
  6. Check doneness with meat thermometer: 125-130°F for medium-rare, 140-150°F for medium, 160-165°F for well done.
  7. Remove from air fryer and tent with foil. Let rest 10 minutes before slicing against the grain.

Notes

Let the roast come to room temperature before cooking for best results. Use a thermometer for accuracy. Customize seasonings and try adding vegetables halfway through cooking.
