Ingredients

  • 4 salmon fillets (skin-on or skinless, 1-inch thick)
  • Salt and black pepper, to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 cup pomegranate molasses (or reduced pomegranate juice)
  • 1 tbsp honey or maple syrup
  • 1 clove garlic, minced
  • 1 tsp soy sauce or tamari
  • Pinch of red pepper flakes (optional)
  • Fresh parsley or cilantro, chopped (for garnish)
  • Pomegranate arils (for garnish)
  • Cooking spray or air fryer-safe parchment paper

Instructions

  1. Thaw salmon if frozen, and pat fillets very dry with paper towels.
  2. Season fillets with salt, pepper, garlic powder, onion powder, and paprika.
  3. In a small saucepan, combine pomegranate molasses, honey, minced garlic, soy sauce, and red pepper flakes. Simmer over medium-low heat for 5–10 minutes until thick and glossy. Set aside.
  4. Preheat air fryer to 375°F (190°C) for 3–5 minutes.
  5. Lightly spray air fryer basket or line with parchment paper.
  6. Place salmon fillets skin-side down in a single layer in the basket. Do not overcrowd.
  7. Air fry for 6–8 minutes depending on thickness.
  8. Brush salmon with prepared glaze. Continue cooking for 2–4 more minutes until internal temp reaches 145°F (63°C).
  9. Let salmon rest for 1–2 minutes. Garnish with fresh herbs and pomegranate arils. Serve immediately.

Notes

Apply glaze during the final 2–4 minutes to avoid burning. Always pat salmon dry before seasoning for best texture.
